Introduction

This is a refresher to emphasise the importance of good food hygiene practices and of the need to handle and prepare food in a safe, clean environment. It provides the underpinning knowledge of food safety for the development of your food safety management system.

By the end of this refresher, you will :

You can work through this refresher in sequence or dip in and out of the topics by using the navigation on the left hand side of this screen.

Note: More able businesses may wish to use this refresher as reference material when developing their system.

Duration: For the complete module, allow 80 minutes. You can work through the module in stages :

Introduction - Hazards/Bacteria (10 minutes)
Part 1 - Training/Personal Hygiene/Cleaning (20 minutes)
Part 2 - Temperature Control/Cross Contamination Prevention (20 minutes)
Part 3 - Pest/Waste/Maintenance/Stock Control (20 minutes)
